Ingredients
  

  • 1 large Zucchini

The Dredge / Binder

  • ½ cup club soda
  • ½ cup flour
  • ¼ cup corn starch
  • ¼ tsp onion powder
  • ¼ tsp garlic powder
  • ½ tsp salt
  • 1 tsp Italian Seasoning (finely ground)

Crunchy Outer Shell

  • 3/4 cup panko
  • 1 tsp pinch oregano
  • 1 tbsp corn starch

Instructions
 

Prepare the Zucchini

  • Cut the Zucchini in half along its length, if seeds are large, remove them. Cut the half into sections along the length to approximately 1/2 inch thick and 3-4 inches long. Set the steaks aside.

Make the Binder Dredge

  • Mix all of the ingredients for the dredge into a bowl and mix. Use less then 1/2 cup of club soda then slowly mix in until the consistency is thicnk enough to coat and not drop off of a spoon.
    ½ cup club soda, ½ cup flour, ¼ cup corn starch, ¼ tsp onion powder, ¼ tsp garlic powder, 1 tsp Italian Seasoning, ½ tsp salt

Make the Coating

  • Mix the panko with the oregano and corn starch. The panko should be covered with the starch on the outside (this is help with sticking to the zucchini).
    3/4 cup panko, 1 tsp pinch oregano, 1 tbsp corn starch

Prepare the Zucchini Steaks & Fry

  • 1. Dip a zucchini steak into the binder covering the zucchini on all sides thoroughly. It should not drip off showing parts of the vegetable.
  • 2. Coat the zucchini steak with the panko mix then set it on top of a mesh cooking rack.
  • 3. Repeat this for all of the zucchini steaks.
  • 4. Heat a deep pan of vegetable oil or oil of choice at 375F. Fry for approximately 5 minutes or until golden brown.

Serving:

  • Serve on a plate layered with paper towels with a dipping sauce of choice. Ranch Dressing is a favorite but these zucchini steaks are great all on their own.
