Ginger Scallion Whitefish (Chinese Steamed Whitefish)

This recipe features tender, flaky perch (or your choice of whitefish) steamed to perfection with fragrant ginger and scallions. It's an easy and elegant way to enjoy the natural flavors of fresh fish.
Ingredients
- 1 lb perch (or other whitefish) like sea haddock, cod, sea bass, or swordfish)
The sauce:
- 3 oz ginger thinly vertically sliced
- 3 stalk whole scallions white and green parts separated, thinly sliced (1-2 inch long)
- 2 tbsp soy sauce
- 1 tsp dark soy sauce
- 5 whole red chilis thai or chinese chilis (hot)
- 1 tbsp Shaoxing wine or dry sherry
- 1 tsp sesame oil
- ½ tsp salt
- ¼ tsp white pepper
- 1 tbsp vegetable oil
Garnish:
- Fresh cilantro sprigs
- Roasted sesame seeds
Instructions
Prepare the fish:
- Rinse the fish fillets and pat them dry. Place them on a heatproof plate that will fit inside your steamer.1 lb perch
- For whole fish, score along the dorsal fins and 3-4 though both sides of the fish. Remove head or cut in half to fit in the steamer if needed.1 lb perch
Season the fish:
- Lightly sprinkle the fish with salt and white pepper.½ tsp salt, ¼ tsp white pepper
Add aromatics:
- Arrange some ginger slices and white parts of the scallions over the fish.3 oz ginger, 3 stalk whole scallions
Steam the fish:
- Bring water to a boil in the bottom of your steamer.
- Place the plate with the fish in the steamer basket, cover, and steam for 10-15 minutes, or until the fish is cooked through and flakes easily with a fork. The cooking time will depend on the thickness of your fish.1 lb perch
Make the sauce:
- While the fish is steaming, combine soy sauce, Shaoxing wine, and sesame oil in a small bowl.2 tbsp soy sauce, 1 tsp dark soy sauce, 1 tbsp Shaoxing wine, 1 tsp sesame oil, 5 whole red chilis
Finish the dish:
- Once the fish is cooked, carefully remove the plate from the steamer. Pour the sauce over the fish.
- Add the scallions, ginger, and more chilis (optional) over the top of the fish topping the sauce.
Heat the oil:
- In a small pan, heat the vegetable oil over medium-high heat until it shimmers.1 tbsp vegetable oil
Add the final touch:
- Pour the hot oil over the green parts of the scallions, ginger, and chilis to release their fragrance.Fresh cilantro sprigs, Roasted sesame seeds
- Garnish with fresh cilantro sprigs, and seasame, if desired.
Serving Suggestions:
- Serve the steamed whitefish immediately with steamed rice and your favorite stir-fried vegetables for a complete and satisfying meal.

Notes
- You can adjust the amount of ginger and scallions to your liking.
- If you don't have Shaoxing rice wine, you can substitute it with dry sherry or mirin.
