  • 1 pound Italian sausage casings removed
  • 6 slices bacon chopped
  • 1 whole med yello onion chopped
  • 5 cloves garlic minced
  • 6 cups chicken broth
  • 4 whole medium potatoes peeled and diced
  • 1 bunch kale stems removed and chopped
  • 1 cup heavy cream

Instructions
 

  • Brown the sausage: In a large pot or Dutch oven, brown the sausage over medium heat, breaking it up with a spoon. Keep the excess juices for optional use in soup broth.
    1 pound Italian sausage
  • Cook the bacon: Add the bacon to the pan and cook until crispy. Remove the bacon and set aside, leaving the bacon grease in the pot or set it aside for use later.
    6 slices bacon
  • Sauté the vegetables: Add the onion and garlic to the pot and sauté until softened, about 5 minutes.
    5 cloves garlic, 1 whole med yello onion
  • Simmer the soup: Pour in the chicken broth and add the potatoes. Bring to a boil, then reduce heat and simmer for 15 minutes, or until the potatoes are tender.
    6 cups chicken broth, 4 whole medium potatoes
  • Add the kale: Stir in the kale and cook until wilted, about 5 minutes.
    1 bunch kale
  • Finish the soup: Stir in the heavy cream and season with salt, chicken bouillon, and pepper to taste.
    1 cup heavy cream
  • Serve: Ladle the soup into bowls and top with the crispy bacon and grated Parmesan cheese.
