This is a recipe for a burrata tower that is sure to impress. It is made with fresh burrata cheese, sliced tomatoes, a lemon, herb, and garlic dressing, pine nuts, and fresh basil.
This dish is perfect for a special occasion or a romantic dinner. It is easy to make, but it is very elegant and delicious.

Ingredients
  

The Tower:

  • 1 whole whole heirloom tomato sliced into 4 horizontal layers
  • 6 oz burrata cheese
  • 4 leaves fresh Italian sweet basil
  • 2 tbsp pine nuts
  • 1 pinch lemon zest

The Dressing:

  • 2 clove garlic
  • 1 pinch Italian Seasoning
  • 1 tbsp lemon juice fresh squeezed
  • 1 tsp extra virgin olive oil
  • 1/2 tsp salt
  • 1 tsp balsamic vinegar

Instructions
 

Prepare The Ingredients:

  • Roast the garlic and pine nuts at 275 degrees F until brown. Check frequently to avoid burning the ingredients.
    2 tbsp pine nuts, 2 clove garlic
  • Dice 2 leaves of basil into thin strips, keep two for garnish.
    4 leaves fresh Italian sweet basil
  • Grind the italian seasoning and roasted garlic using a mortar & pestle or spice grinder
    1 pinch Italian Seasoning, 2 clove garlic
  • Slice the tomato into 3-5 horizontal sliced
    1 whole whole heirloom tomato

Mix The dressing:

  • Mix the olive oil, balsamic vinegar, salt, italian herb & garlic, and lemon juice then mix or blend thoroughly. Then pour through a sieve to filter down into a fine liquid. Press any garlic remains through by forcing it through the mesh if needed - garlic is gold.

Build the tower:

  • On the base of the plate pour some dressing and place the bottom layer of the tomato
  • For each subsequent layer spread some burrata cheese, a splash of dressing, some basil, and a few pine nuts.
    6 oz burrata cheese, 4 leaves fresh Italian sweet basil, 2 tbsp pine nuts
  • On the top layer put more cheese, garnish with the full basil leaves.
  • Pour the remainder of the dressing on the plate with splashes of olive oil. And decoratively spread the remainder of pine nuts.
  • Finally, sprinkle the lemon zest over the top of the tower as the final flourish.
    1 pinch lemon zest
