Ingredients
For the Chicken Marinade:
- 1 lb boneless skinless chicken breasts, cut into 1-inch pieces
- 2 tbsp soy sauce
- 1 tbsp cornstarch
- 1 tsp sesame oil
For the Stir-fry:
- 2 tbsp vegetable oil
- 8 oz cremini/white mushrooms sliced
- 1 medium zucchini medallioned or halved lengthwise and sliced
- 5 cloves garlic minced
- 2 tsp ginger minced
- ¼ whole medium white or yellow onion, julienned julienned
For the Sauce:
- 1/2 cup chicken broth
- 1 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 ½ tsp brown sugar
- 1 tsp cornstarch
- 1 tsp Chinese black vinegar or rice vinegar
- 1 tsp sesame oil

- Marinate the chicken: In a medium bowl, combine the chicken, with 1tsp soy sauce, 1tsp cornstarch, and a splash of sesame oil. Massage the chicken and marinate it for at least 15 mins (or up to overnight in the refrigerator).1 lb boneless
- Prep the veggies: While the chicken marinates, slice the mushrooms, onions, and zucchini. Mince the garlic and ginger.8 oz cremini/white mushrooms, 1 medium zucchini, 5 cloves garlic, 2 tsp ginger, ¼ whole medium white or yellow onion, julienned
- Make the sauce:In a small bowl, whisk together all the sauce ingredients until smooth.2 tbsp soy sauce, 1 tsp sesame oil, 1 tbsp oyster sauce, 1 ½ tsp brown sugar, 1 tsp cornstarch, 1/2 cup chicken broth
- Stir-fry the chicken:Heat 1 tbsp of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and cook until browned and cooked through, 1 about 5-7 mins. Remove the chicken from the pan and set aside.2 tbsp vegetable oil, 1 lb boneless
- Add the aromatics: Stir in the garlic and ginger and cook for 30 seconds until fragrant.5 cloves garlic, 2 tsp ginger
- Add the remaining 1 tbsp of vegetable oil to the pan. Add the zucchini and stir-fry for 2 mins until slightly softened. Add the mushrooms and onions, cook until they release some of their moisture, about 2-3 mins.2 tbsp vegetable oil, 8 oz cremini/white mushrooms
- Thicken the sauce:Give the sauce a quick whisk to recombine, then pour it into the pan with the vegetables. Cook and stir until the sauce thickens, about 1 min.
- Combine and serve:Return the cooked chicken to the pan and stir to coat in the sauce. Cook for another minute to heat through. Serve immediately over steamed rice.

- For extra flavor: Use Shaoxing wine instead of chicken broth or split 50/50 in the sauce.
